It is my favorite new pasta sauce!!!  Oh, my husband loves it too.  It is a symphony of flavor in every bite, packing a spicy and bold with savory taste.  When you slurp it, yes, you will slurp this goodness, your taste buds salivate and you will want the last piece of bread to mop up all that yumminess.  So, ready to make it tonight?  And if there are any leftovers, they are great the next day!!!  Here is the recipe:

Puttanesca
1 tbsp Olive oil
1/2 red onion, chopped
1 red/yellow pepper, chopped
4-6 cloves garlic, sliced
1 jar of fire roasted peppers, chopped  (I used Trader Joe’s)
2-3 tbsp capers with a little juice
1/2 c pitted kalamata olives
1 400g can of diced tomatoes
1/2 bunch fresh parsley, chopped
1 package of Pappardelle pasta (again Trader Joe’s)
Pepper to taste. Probably won’t need salt, but you decide.
Sauté garlic, onion, pepper in olive oil
Add the rest of the ingredients except parsley.
Let simmer while pasta is cooking. Just before serving add the parsley.
Stir in Pappardelle pasta.
Serve as is or add a little pecorino or Parmesan cheese
If you need protein, grilled chicken is a great addition.
